Frankfurts and Baked Beans - Easy Holiday Meal

We all loved this meal while camping and also enjoy it at home, it is easy and quick.  All you need is:

  • Frankfurts
  • 2 tins baked beans
  • 1 Onion
  • 2 tomatos
  1. dice onions and tomatos, slice frankfurts
  2. fry onions
  3. add tomatos
  4. add frankfurts
  5. stir in baked beans
  6. enjoy!

Nachos for Kids

If you want to serve up nachos for your toddler or child but he or she does not like food to spicy this is the recipe for you.

What you need
- Corn Chips
- Grated cheese
- Can of baked beans
- Avocado
- Tomato
- Cucumber
- Sour cream

What you Do
- In an over proof dish put a layer of corn chips, followed by a sprinkle of cheese, followed by half the baked beans. Now add another layer of corn chips, followed by the rest of the baked beans followed by cheese.
- Bake in the oven for 5 - 10 mins until cheese melts
- Meanwhile, cut up the avocado, tomato and cucumber to make a small salad
- Serve nachos topped with salad and sour cream.

Cheese Muffin Recipe

These cheese muffins are amazing just out of the oven and make a great savory snack.

Ingredients
3 eggs
3/4 - 1 cup milk
50g butter
2 tablespoons chopped chives or parsley
2 1/2 cups Self Raising Flour
1 cup grated cheese

Method
1. Preheat oven to a moderate heat
2. Beat eggs, milk butter and herbs
3. Sift flour into another bowl and add cheese (reserve a small amount of cheese)
4. Stir in egg mixture
5. Spoon into muffin tin, makes 12 large muffins or many small
6. Sprinkle a small amount of cheese on top
7. Bake for 25 min (large muffin) or 15 min (small muffin) or until golden on top

Serve warm

Spinach Pikelet Recipe

This is a great snack for babies and toddlers, this recipe makes a lot of pikelets so why not freeze a few for another day.

Ingredients
3 cups self raising flour
4 eggs
3 cups milk
1 pack frozen spinach
5 spring onions finally chopped
Zest of 1 lemon

1. Thaw spinach
2. Mix all ingredients together
3. Fry with a spoon of butter when needed

You can experiment with using other vegetables, grated carrot and zuccinni are also great.

Vegetarian Sausage Rolls

Another great healthy meal for busy toddlers

Ingredients
1 cup cottage cheese
1/2 cup pecans
3 eggs
1 stick of celery
1 onion
1 tablespoon soy sauce
1/2 cup breadcrumbs
1 cup rolled oats
Chives, Sage, Rosemary or a pinch of what ever you have
3 sheets puff pastry

Method
1. Blend all ingredients
2. Cut each sheet of puff pastry in quarters and put a small amount of mixture on each quarter, roll to look like a sausage roll
3. Cook 20 min in a moderately hot oven, turning once.

These freeze well

Cooking with Toddlers - GingerBread Man

flour1.jpg Ben loves to help with the cooking. He has been nagging me to make Gingerbread Men for weeks now. Today was a rainy day so I decided to give him what he wanted and together we made gingerbread men, well actually they were gingerbread teddies as we do not have a gingerbread man cut out.

I think they ended up looking quite cute. Ben got pretty messy but we had a fun time and the teddies tasted great

Wombat Stew

Ben is 27 months and has started to get a little more picky about food.  He use to eat anything I put in front of him, now he picks at food and only when he is really hungry does he eat anything.  I have been making a beef stew with vegetables and barley, lately he has not been eating it.  The other day I made exactly the same stew as always but called it Wombat Stew and he ate the lot! 

Just goes to show that a bit of creative marketing can be effective.

New Addition to the Family - a Juicer!

I have procrastinated about getting juicer for a long time now…. the other day I was visiting a local organic market and saw the juicer that was made for us!  Not only does it juice but it also minces meat and has a make your own sausage attachment.  And making sausages has been the other item on our agenda for a long time.  So we bit the bullet and purchased it and have been enjoying yummy juice everyday - pink grapefruit and apple is my favorite so far.  This week we are attempting to make some sausages - will let you know how it goes.  Ben has been very excited about our new addition to the family and everytime he sees or hears it he garbles on about ‘juicer, juicer’……
